- Only one or two strains of good bacteria are added back in.
- It’s loaded with sugar to cover up the natural tangy taste. (The fake sugar contributes to yeast overgrowth in your body).
- No enzymes are left in it which are needed for digestion and assimilation.
- Heat sensitive vitamin B6 and B12 are completely burned off during pasteurization.
- It’s flat and not active.
- They use a starter instead of kefir grains.

Kefir Grains Produce a Fantastic Nutrient-Rich Drink
Kefir is a fermented drink, traditionally made using cow’s milk or goat’s milk.
It is made by adding kefir grains to milk.
These are not “grains” in the conventional sense, but cultures of yeast and lactic acid bacteria that resemble a cauliflower in appearance.
Over a period of 24 hours or so, the microorganisms in the grains multiply and ferment the sugars in the milk, turning it into kefir. Then the grains are removed from the liquid, and can be used again.
So basically, kefir is the drink, but kefir grains are the “starter kit” that you use to produce the drink.
Kefir originated from parts of Eastern Europe and Southwest Asia. The name is derived from the Turkish word keyif, which means “feeling good” after eating.
The lactic acid bacteria turn the lactose in the milk into lactic acid, so kefir tastes sour like yogurt, but has a thinner consistency.
A 175 ml (6 oz) serving of milk kefir contains:
- Protein: 6 grams.
- Calcium: 20% of the RDA.
- Phosphorus: 20% of the RDA.
- Vitamin B12: 14% of the RDA.
- Riboflavin (B2): 19% of the RDA.
- Magnesium: 5% of the RDA.
- A good amount of vitamin D.
All delivered in about 100 calories, 7-8 grams of carbs and 3-6 grams of fat, depending on the type of milk that is used. We highly recommend you use raw milk in your kefir!
Kefir also contains a wide variety of bioactive compounds, including organic acids and peptides that contribute to its unusual health benefits.
Dairy-free versions of kefir can be made with coconut water, coconut milk or other sweet liquids. These will not have the same nutrient profile as dairy-based kefir products, however.
Fun Fact: Raw Milk Kefir Is Predigested.
If your small intestine no longer makes the enzyme lactase, which is needed to break down milk sugars, dairy will be difficult to digest, aka you are lactose intolerant. Also, when someone has a permeable, leaky gut lining, the proteins in dairy leak through and cause an immune response against these proteins — specifically, casein and whey protein. These proteins are found in cow, goat, and sheep’s milk.
You get a more powerful Probiotic than Yogurt!
Some microorganisms can have beneficial effects on health when ingested.
Known as probiotics, these microorganisms can influence health in numerous ways, including digestion, weight management and mental health.
Yogurt is the best known probiotic food in the Western diet, but kefir is actually a much more potent source of probiotics.
Kefir grains contain about 30 strains of bacteria and yeasts, making it a very rich and diverse probiotic source.
Other fermented dairy products are made from far fewer strains, and don’t contain any yeasts.
Is It Safe to Drink Kefir Everyday?
Absolutely! In fact, it’s recommended, especially for those who are suffering from debilitating or “terminal” diseases. 4-8 oz. of kefir daily (depending on the severity of your illness) will not only help you heal intestinal diseases, but both the benefits of raw milk kefir and water kefir benefits alike will help you do this, although Living Technologies highly recommends raw milk kefir over water kefir. If you have worries about raw milk due to FDA propaganda, or are (purportedly) lactose intolerant (it’s likely pasteurization intolence, in fact), the question, “Is kefir safe?” becomes moot. Especially in light of the fact that the people of the Caucasus Mountains have been some of the longest living people on the planet for millennia — likely having much to do with their daily consumption of kefir.
The benefits of kefir cancer sufferers know well — the ones who’ve embraced the benefits of raw milk kefir over traditional modes of cancer treatment, that is. For those of us who are well-educated on this subject, there simply are no disadvantages of kefir. Kefir detox symptoms, if any, are generally mild, though for persons who are highly toxic and who are suffering any number of serious health problems may experience what’s known as the Herxheimer Effect or “herxing,” (a term coined to deal with Lyme Disease patients who were detoxing, but which can cover any type of heavy detoxing effect). Again, unless you have serious toxcemia, you will likely experience only a very mild form of herxing when using raw milk kefir. And even then, the good news is you will soon be past the herxing or detox stage and onto a path of golden health ever afterwards!
The Extraordinary Health Benefits of Raw Milk Kefir
Forget what the mainstream has said about kefir. They are busy right now attacking anything that truly cures and heals you of dis-ease. Do you doub t that a small group known as “Big Pharma” is working night and day to protect its lethally-procured trillion dollar “medical treatment” profit machine. They profit from the human populace being sick, and they “manage” your health by getting you addicted to prescription medications from companies such as Merck, Pfizer, GlaxoSmithKline, Bayer, and many more exist merely to rob humans of their health and wealth, using the local family physician as a drug pimp. How can it be denied? All the evidence is in. If you don’t see it, well…
But, this is not an attack on pharmaceutical health-thieves. It doesn’t have to be, because the extraordinary health benefits of kefir are there to witness, for those who have the wisdom to push past the lies and propaganda and take their own health and wellness in hand.
So, to all those who worry about kefir side effects, or “is it safe?” we can only continue the clarion call to wake people in the West up to the many benefits of kefir.
Raw milk kefir is the most potent probiotic out there, with over 30 strains of usable good bacteria. Smart people drink kefir for their probiotic sustenance. We ask them if it’s pasteurized or raw (if milk kefir). This makes them think…
Almost everything (all dairy products), including the kefir you buy in the store has been pasteurized. This means that its nutrients have been altered and some completely destroyed, because during pasteurization all of the good bacteria, live active enzymes, and more are killed off! The result is a “dead product” that contains trace or negligible amounts of beneficial bacteria if any – not too useful to the body because the kefir has completely lost its nutritional synergy. It makes more sense to leave nature alone. Nature always knows best.

For those of you who are more scientifically-minded, this next section is for you. Skip this if you aren’t so interested in the deep science of kefir. To quote from an abstract on a scientific study carried out by the National Institutes of Health:
“Perturbation of bacterial microflora of the gastrointestinal (GI) tract may play an important role in the pathophysiology of some GI disorders. Probiotics have been used as a treatment modality for over a century. They may restore normal bacterial microflora and effect the functioning of the GI tract by a variety of mechanisms. Probiotics are not currently regulated and only few randomized controlled trials exist investigating their efficacy in different GI disorders. They are available in a variety of formulations and delivery systems making interpretation and comparison of studies
even more difficult. The efficacy of probiotics, either as a single strain or a combination of probiotics, has been tested in antibiotic-associated diarrhea, Clostridium difficile colitis, infectious diarrhea, ulcerative colitis, Crohn’s disease, pouchitis, and irritable bowel syndrome, among other disorders. Results of the studies are reviewed in this article and recommendations
for probiotic use in these disorders are made. Although probiotics appear to be generally safe in an outpatient setting, the situation may be different in immunocompromised, hospitalized patients who may be at a greater risk of developing probiotic sepsis. [Stick with us and you won’t ever see the inside of a hospital!]
No studies exist addressing the issue of safety, specifically. Many questions regarding use of probiotics in GI disorders remain to be answered in future studies, such as most optimal doses, duration of treatment, physiological and immunological effects, efficacy of specific probiotics in specific disease states, and safety in debilitated patients.”
That’s the “official” word from the NIH. We self-healers know better, however. We know that the benefits of raw milk kefir and probiotics are Mother Nature’s answer to dis-ease, and that they have been able to do things like heal intestinal disorders (or prevent them from occurring in the first place, rather) since men and women began milking cows and sheep and goats millennia ago and discovered the little granules of good health that were formed by the dairy fermentation process.
